Shortcake is a sweet cake or biscuit which is a crumbly bread that has been leavened. The shortcake is also interchangeably called as shortbread too sometimes so yes these irresistible cookies are the sweet cake in the cookie form – flaky , sweet, delectable , biscuit like texture and topped with fresh strawberries and you cannot ask for anything more. They are absolutely drool worthy.

Recipe has been inspired from the net however all of them had egg so when I wanted to do eggless, it wasn’t easy finding replacement. The recipe below is the perfect one for eggless shortcake cookies

Now you can add jam and make thumbprint shortcake cookies or also add cream cheese as filling or sandwich 2 cookies with cream cheese filling, they taste too awesome. Since these cookies contain fresh strawberries, they need to be consumed quickly. These cookies taste best with fresh strawberries, however ,if strawberries aren’t in season then yes frozen or dried strawberries can be used

Dried strawberries can be ground to powder and added to cookie dough, they taste equally good. If you are ok with additional sweetness, then do add in white chocolate chips, they add oomph to the cookies. Now when you bake the cookies, they will easily fluff up but then bake little longer for that slight crisp texture which shortcake has.

Once baked, mine finished within 3 hours of baking so yes , these cookies are definitely worth a try 🙂

*Do not just bake or under bake these cookies. Shortcake cookies have biscuit like texture so these cookies need to be slightly crisp. Again do not over bake as Short cake also has cake like texture

**Strawberries release moisture and spoil quickly hence they need acidic ingredients to preserve so mixing with lemon- sugar mixture and straining liquid is essential before preparing the cookies

***White Chocolate chips can be added to cookies for additional taste

***Coating strawberries with flour will prevent them sinking to the base of the cookies. For even more crunchier top, sprinkle granulated sugar on top before baking

* **Instead of Brown sugar, regular sugar can be used. Brown sugar adds in moistness to be cookies

***The cookies fluff up on baking so do not shape them as thick /fat cookies

Preparation time: 15 mins Baking time: 15 mins Total time: 30 mins

Servings: 14-16 cookies


1 cup = 240 ml

  • 1 cup All purpose flour/Maida
  • 1.5 tbsp Corn flour
  • 1./2 teaspoon Baking powder
  • 1/8 teaspoon salt
  • 5 tbsp + 1/2 tbsp Castor Sugar
  • 2 tbsp Brown Sugar
  • 3 tbsp Milk/Cream
  • 55 g soft unsalted butter
  • 1/2 teaspoon Vanilla extract
  • 1/4 cup chopped Strawberries
  • 1/2 tbsp Lemon juice

Steps to prepare

*Always read the notes before preparation

  • Add chopped strawberries in a bowl, to this add 1/2 tbsp sugar and lemon juice
  • Rest on the counter for 10 mins. Strain excess liquid from strawberry, the liquid can be used for glaze preparation if desired
  • Sieve both the flours, baking powder and salt in a bowl
  • Blend butter, 5 tbsp sugar and brown sugar in a bowl for 6-7 minutes until light and creamy
  • Add milk/cream and vanilla extract, mix well
  • Add dry ingredients and mix well to form a dough
  • Strain the strawberry again, add a pinch of flour to the strawberries and mix well
  • Now add strawberries to the dough and gently mix
  • Cover the dough with cling wrap and refrigerate for 1 hour OR chill for 30 minutes
  • Preheat the oven to 180 degree Celsius and line baking tray with parchment paper
  • Using spoon or ice cream scoop, scoop out the dough and gently flatten them
  • Place them on baking tray leaving gap between them
  • Bake for 15-18 mins until golden brown and slightly crisp
  • Cool the cookies on the tray for 10 mins
  • Cool on the wire rack completely
  • Store in air tight container and consume within 2 days as these cookies contain fresh strawberries
  • Munch on the delectable Short cake cookies as or serve with jam or sandwich with cream cheese filling
