Delectable , richly flavored with coffee, spices and walnut, this whole wheat pound cake is definitely worthy combination with steaming cup of tea/coffee. The flavor is unique and irresistible yet subtle in taste

Coffee and walnut cake is a perfect combination when you think about a tea cake for evening cup of tea so when I wanted to try out different flavors in pound cake, I knew this would always be my first choice

Pound cake is a traditionally made with a pound of each of four ingredients: flour, butter, eggs, and sugar. Pound cakes are generally baked in either a loaf pan or a Bundt mold, and served either dusted with powdered sugar or lightly glazed. Now I have made the pound cake several times in different flavors with eggs and all purpose flour (APF/maida) combination however I wanted to prepare this cake with whole wheat flour minus eggs

Whole wheat flour is quite dense and has more overpowering taste than APF/Maida so it was essential to retain the taste , texture and flavor. Now using flax eggs/fruit purees was out of question for egg replacer as this would make the cake denser and overpower the flavor of coffee. So the options left was yogurt/condensed milk and tofu. I ruled out the last option so I decided to go ahead with yogurt and condensed milk. The condensed milk with brown sugar mixed with butter brings in right flavor to this cake

Now I prefer munching on the cake as is but my son prefers it with chocolate sauce while my hubby loves it with icing sugar so you can try and see what suits your taste better. you can also do coffee cream cheese or butter cream icing glaze on top

*Brown sugar brings in moistness as compared to white sugar so it’s best to use brown sugar

*Increase the amount of sugar by 3-4 tbsp as coffee and whole wheat flour tempers the sweetness so if you like it bit more sweet then increase the sugar

**Sieve dry ingredients thrice this will give better airy texture. Adding spices is optional, but it adds in nice flavor, you can always adjust the amount of spices as desired

**You can always increase the amount of coffee powder if you want a stronger flavor of coffee

***You can always substitute whole wheat flour with mix of APF/Maida and wheat flour for better taste

***Always grease bundt pan towards the end of batter preparation and grease with shortening and flour mix. Do not use butter to grease bundt pan

  • 150g whole wheat flour
  • 2 tbsp corn flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1.5 teaspoon Instant coffee powder
  • 120 ml warm milk
  • 4-5 tbsp Brown sugar/white sugar
  • 200g Condensed Milk
  • 120g unsalted butter
  • 1/2 cup chopped Walnuts

Steps to prepare

*Always read notes before preparation

  • Preheat oven to 170 deg cel
  • Mix coffee and warm milk in a bowl and keep it aside
  • In another bowl, sieve wheat flour, cinnamon, corn flour, nutmeg, baking powder, baking soda and salt. Now sieve this thrice and keep it aside
  • Melt the butter in a bowl, to this add sugar and mix well. Hot butter will easily melt the sugar
  • Now add condensed milk and whisk until well combined
  • Gradually add dry ingredients and whisk until just combined
  • Add in prepared milk coffee and mix
  • Gently fold in chopped walnuts and mix
  • Grease Bundt pan with shortening and flour mix
  • Pour the prepared batter into bundt pan and level evenly
  • Tap the tin on the counter several time to allow air bubbles to escape
  • Bake for 30-40 mins until done. Toothpick inserted into center should be clean or can have few crumbs. Do not overbake as wheat flour cakes will become drier on over baking
  • Cool the cake in the tin for 15 mins. If required , gently run plastic knife around the edges
  • Demould the cake and cool on wire rack completely
  • You can dust the top of the cake with icing sugar or drizzle chocolate sauce on top or Munch on as is
  • Now slice and serve this delectable cake
