Harcha (pronounced as “Harsha”) is a gluten free Moroccan Semolina Soft pan fried flat bread. This is often served as breakfast or as snacks with steaming cup of Mint tea or Coffee. It’s quite delectable in taste which tastes best with butter, cheese,egg salads,honey or jam. This is also called as “mbesses” in Morocoo. Harcha means “rough” in Arabic and yes due to the presence of Semolina, it has rough texture as compared to flour based bread. This can be made either with Yeast or baking powder

This is cooked in large pan and should be cooked over low heat only else the inner portions would be raw. Do not hurry the process, let Harcha cook nicely on both sides and you will be rewarded deliciously for the patience 🙂 .You can add in minced meat fillings or onions etc too to this bread mixture and cook, this will make it even more delicious. Now this can be made both Sweet or Savoury. Just skip the sugar if you wish to make savoury version. Prepare this delectable Harcha once and you will keep making some more 😉

*Cook only over low heat else the inner portions would be raw while the outer portion would have browned completely

**Flip this bread only once, being gluten free, it would break up easily, so flip it only once base is completely cooked. Do not disturb it while it’s cooking

***Resting the dough will allow Semolina to absorb liquid completely and it’s best not to over knead this mixture. Skip sugar if you wish to make Savoury Harcha

Servings: 4


  • 2 cups fine Semolina
  • 3 tbsp superfine Sugar/Powdered sugar
  • 120 gms soft unsalted Butter
  • 1/4 teaspoon salt
  • 1/2 cup or more Milk
  • 2 teaspoon Baking powder

Steps to prepare

  • In a bowl, mix semolina, sugar,salt and baking powder
  • Add butter and mix well until the entire mixture is crumbly
  • Add milk and knead soft smooth dough. Add additional milk only if required
  • Keep this aside for 10 minutes
  • Heat a tawa/girdle or non stick pan. Greasing it is optional
  • Make lemon sized balls of the dough. Flatten balls into 1/4 -1/2 inch thickness flatbread. You can shape this with cookie cutter too
  • Now place flat breads on skillet and cook over low heat. Do not disturb while it’s cooking. Do keep an eye as these flatbread brown quickly. It takes 10-12 minutes to cook each side, do not hurry the process
  • Once base is cooked, cautiously flip and cook the other side too
  • Serve warm with butter, cheese, egg salads, honey or jam along with freshly brewed mint tea or coffee
