This is one of the simplest, yet delicious curries prepared with Potatoes and curd which is especially consumed during fasting. Now during regular days, you can add in additional spices like garam masala, turmeric and coriander powder to the curry for better taste. Since Navratri is on, this is the time when most of us go on fasting during which we have restrictions on spices usage
During fasting time in India, non veg dishes,onions, garlic , certain spice powders, rice and all rice dishes, all purpose flour ,wheat flour etc are not allowed . All gluten free flour and millets are only allowed. So here comes the curry which is light, easy,simple to prepare and yet delicious in taste that can be consumed during Fast/Vrat period
*Adjust spice levels to taste. Instead of red chili powder, green chilies can also be used. Add fennel powder for additional taste

Ingredients
- 1 cup Curd
- 2 medium boiled Potatoes, cubed
- 1 teaspoon Cumin seeds
- 1/2 teaspoon Red Chili powder or 1 green chili finely chopped
- 1-2 tbsp Ghee/Clarified butter
- 3/4 cup Water
- 1 tbsp Rajgira Flour(Amarnath) / Singhara Flour (Water chestnut flour)
- Sendha Namak/Rock Salt as per taste
- 1 inch grated Ginger
Steps to Prepare
- Whisk curd well in a bowl
- Add flour and whisk well. keep it aside
- Heat ghee in a pan. Splutter cumin seeds
- Add ginger and stir fry for few seconds
- Add potatoes and mix well. Saute for 3-4 minutes
- Add curd and mix well
- Add water and mix well
- Add salt, red chili powder and mix well. cook for a minute
- Simmer and cook until curry starts thickening stirring occasionally
- Garnish with coriander leaves and serve warm with poori, thalipeeth or paratha
