Left over tortillas/Rotis? Left over veg side dish?? or wondering what to prepare for Kids tiffin box??Want some delicious snack?? Crave for lip smacking street food?? then you have reached the right dish, this Veg Frankie meets all the above criteria. Oh , this is absolutely delightful in taste, not just the kids, adults would equally love it. This is so easy to prepare and very healthy. Now the street food frankie isn’t healthy but you can make it healthier while preparing this at home. Frankie originates from Mumbai, India and actually has egg layer on 1 side, though this is wrapped in foil while serving, for health reasons, I have not used foil to wrap it

Now I prepare the sausages ahead and freeze it so when I want to prepare a snack or if I have any left over vegetable sabzi (side dish) , I just need to prepare rotis/tortillas . Or if I have some leftover tortillas/rotis, I just need to fry the sausage and assemble it. Now if you do not have time and patience to shape the sausages, then just saute the veg mixture directly for 6-7 min in 2-3 tbsp oil and spread over the tortilla/roti and voila, your roll is ready.

Now the Street food vendor while preparing Veg Frankie uses egg on one side of the tortilla/roti for extra soft and crisp taste, here I have skipped it, you can use 1 beaten egg with little added salt and pepper. While preparing the tortillas/rotis, spread little egg mix on 1 side over tortilla and the cook the egg. While assembling the sausage is placed over the egg side. Further the street food vendor uses Frankie masala (Frankie Spice powder) so you can skip all the spice powders and directly use them if you have it handy

*Addition of yogurt makes tortilla/roti softer, you can add/skip it as desired. You can add any veggies of your choice in this dish including grated cottage cheese or tofu too. You can prepare the tortillas/rotis without oil. But if you desire to prepare it as street food snack, then you would need to shallow fry it

**If you wish to make it healthier, skip the cheese and bake sausages. Adjust the sauces as per taste or skip them and use dates tamarind chutney instead

***If you have Frankie masala (home made or store brought) then , skip all the spice powders in the recipe and use it instead, add 1 tsp Frankie masala to the veggies and sprinkle some while assembling. Since I have added green chili paste, I have skipped red chili powder, you can use mix of both or either one of them

Servings: 5-6


For Roti/Tortillas

  • 2 cups All purpose or Whole wheat flour or mix of both
  • Salt  to taste
  • 2 teaspoon Oil 
  • 1/4 cup yogurt – optional
  • Water as required

For veg sausage

  • 4 medium Potatoes , boiled and mashed
  • 1/2 Capsicum, chopped
  • 1/3 cup Peas , boiled
  • 1/3 cup Sweet corn ,boiled
  • 1/2 cup Carrot , grated
  • 1/2 teaspoon ginger garlic paste – optional
  • 1 teaspoon Green chili paste
  • 1/2 teaspoon Garam Masala powder
  • 1/4 teaspoon Cumin coriander powder
  • Salt- to taste
  • 2 teaspoon Lemon juice or 1/2 teaspoon Amchur powder
  • 3 tbsp Cornflour
  • 1/2 cup breadcrumbs (optional)
  • Oil – to shallow fry/deep fry/bake

For Assembling

  • 2 tbsp tomato sauce
  • 1.5 tbsp Mayonnaise
  • 1 tbsp mustard sauce
  • 2 Onions, finely chopped
  • 1/2 cup chopped Coriander leaves (cilantro)
  • 4-5 teaspoon chat masala to sprinkle
  • 4-5 tbsp grated cheese – adjust

Steps to prepare

  • For Roti/Tortillas: Mix all the ingredients in a bowl and knead into a soft dough. Cover and rest aside for 2 minutes.
  • Divide the dough into equal portions. Roll out into rotis/ tortillas and cook on tawa/non stick pan.
  • Shallow fry the roti//toritllas with oil. Place them in hot pot and keep it aside
  • For Veg Sausage:
  • Coarsely grind corn, peas ,carrot and capsicum. Transfer the mixture to bowl
  • Add mashed potatoes, green chili paste, salt and spice powders with corn starch. Mix well to form soft dough. If the mixture is soggy, add breadcrumbs to absorb the moisture. Shape them into sausages
  • Now chill this for 1 hour. You can start preparing immediately but its best to chill so that it wouldn’t break while shallow or deep frying them. Store sausages in air tight container and freeze for 1 week
  • Shallow /Deep fry the sausages until golden brown on all sides over medium heat
  • Drain excess oil over tissue paper
  • For assembling:
  • Mix Mayonnaise and sauces in a bowl and keep it aside
  • Place tortilla/roti on a plate. Smear the prepared sauce mix evenly all over
  • Add chopped onions to the centre. Place prepared veg sausage on top
  • Sprinkle cheese, coriander leaves and chat masala on top
  • Fold from the end, left and right to form a tight roll, you can check the video for better clarity
  • Fix with a toothpick or cover Frankie/roll with butter paper
  • Serve hot with green chutney or as is
