You can use whole wheat flour or all purpose flour to prepare this cake. I have done whipped cream frosting with 2 tbsp mango puree and mango essence and topped with chopped mangoes so this cake is out and out bursting with flavors of mango.

This cake tastes good as is too. If you wish you can dust the cake with powdered sugar or do whipped cream frosting

*It’s best to use fresh unsweetened mango puree for the right taste. If you do not wish to use mango puree then substitute puree with chopped mangoes and if you do not wish to use chopped mangoes then substitute with mango puree

**For additional taste , you can add 1/2 teaspoon cardamom powder too. If the batter is too dense, add additional 3-4 tbsp milk

Eggless Mango Cake

Preparation time: 15 mins Baking time: 30 mins Total time: 45 mins

  • 11/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup fresh mango puree
  • 1/4 cup+ 2 tbsp milk
  • Few drops mango essence – optional
  • 200 ml condensed milk
  • 100 g soft unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped mangoes
  • 1-2 drops Saffron food color/ 1 tsp Saffron milk – optional

Steps to prepare

  • Preheat oven to 180 deg cel and prepare 8 inch cake tin
  • Blend butter in a bowl for 30 sec
  • Add condensed milk, milk, vanilla essence and mango essence
  • Blend all ingredients until well combined
  • Now add mango puree and blend well
  • I have skipped food color, you can add food color or saffron milk for brighter mango color. If using it, add them now and blend well
  • Sieve flour, baking powder and baking soda in a bowl
  • Add flour mix to the wet ingredients and blend until just combined
  • Add chopped mangoes and fold in gently
  • Pour the batter into prepared cake tin
  • Bake for 30-40 minutes until done. Toothpick inserted into centre should be clean, it can have few crumbs but no batter
  • Allow to cool for 20 minutes in cake tin
  • Demould and cool on wire rack completely
  • Since I want to frost the cake, I have sliced into 2 layers. I chilled the cake for 1 hour in cling wrap, then sliced it
  • I have done whipped cream frosting with mango essence in it. You can serve the cake as is or dust with powdered sugar or do butter cream frosting, check the video on slicing and frosting the cake
  • Slice and serve this delicious cake
