Born and brought up in Mumbai, Mumbai street foods has always topped my list when it comes to street foods. Masala pav is spicy and lip smacking snack from Mumbai , India

This dish has similar taste to Pav bhaji due to common spices, now there are variations to this Masala Pav, you can add potatoes too to this dish, I have skipped it as per original version. This dish can also be prepared with left over pav bhaji masala. Onions, tomatoes and Capsicum are the main veggies used in the dish

Now this dish is completely roasted in butter so you can add additional butter for rich flavor. If you do not have capsicum then use bell pepper. This is a snack cum complete meal in itself. You can double/triple the quantity as desired

Mumbai Masala Pav


  • 3 teaspoon Butter
  • 1 tsp Ginger garlic paste
  • 1 Onions finely chopped
  • 1 Tomatoes finely chopped
  • 1/2 Capsicum finely chopped
  • 1 teaspoon kashmiri Chili powder/Paprika
  • 1 teaspoon pav bhaji Masala
  • Salt to taste
  • 3-4 tbsp Water
  • 2 pav/dinner rolls
  • 2 teaspoon Butter to roast pav
  • 2 teaspoon chopped Coriander leaves (cilantro)
  • 1 teaspoon grated cheese (optional)
  • 1/2 teaspoon Sev – optional

Steps to prepare

  • Melt butter in a pan
  • Add onions and saute until translucent
  • Add ginger garlic paste and saute until raw aroma goes away
  • Add capsicum/bell pepper and saute for 3-4 minutes
  • Add tomatoes and cook until tender
  • Add pav bhaji masala, salt and chili powder. Mix well.
  • Add little water to cook masalas.
  • Using masher, mash the veggies well
  • Scrape masala to side of pan. Add butter at centre
  • Slit pav in halves, Roast pav until golden brown in same pan
  • Flip pav and roast again, add masala to pav in between slits
  • Add remaining masala on top of pav
  • Garnish with little grated cheese ,sev (optional) and coriander leaves. Serve hot with Onions and lemon wedges
