This is a lovely creamy delicious Kheer made from Phool Makhana (Fox nuts/Lotus Seeds). This is often made during Navratri or Maha shivratri, specially during vrat (fasting) time. This is quite easy and simple to make and requires fewer ingredients

Just because you are fasting, you need not forfeit your favorite dessert Kheer. Makhana is quite healthy and easy to digest. You can check the additional benefits of Makhana here. Now you needn’t be on fasting to enjoy this kheer, you can have it anytime you feel like having dessert. The additional benefit is you can always substitute regular rice in kheer with Phool Makhana

*You can always adjust the quantity of ghee and sugar as desired. Add additional nuts to enhance the flavour

Makhane ki Kheer

Preparation time: 5 mins Cooking time: 30 mins Total time: 35 mins

Servings: 4


  • 1 cup Phool Makhana (Fox nuts/Lotus Seeds)
  • 3.5 cups milk
  • 1/4 teaspoon Cardamom powder
  • Few Saffron strands
  • 1/3 cup Sugar- adjust
  • 3 tbsp Cashews
  • 2 tbsp Ghee (Clarified Butter)

Steps to prepare

  • Heat Ghee in a pan
  • Add cashews and deep fry until golden brown
  • Keep the fried cashews aside.
  • In same pan, add Phool Makhana
  • Roast Makhana until golden brown. Take it out from the pan
  • Now reserve half of Makhana and grind remaining half to coarse powder. Keep this aside
  • Heat milk in deep bottom vessel. Bring milk to boil over medium heat stirring occasionally
  • Simmer and cook the milk for 6-7 minutes
  • Add saffron and mix well
  • Now add ground Makhana powder and reserved Makhana to milk. Mix well
  • Cook milk for 8-9 minutes stirring occasionally
  • Add sugar and mix well. Cook for another 5 minutes
  • Finally add cardamom and mix well
  • Add fried nuts and mix. Switch off the heat
  • Transfer Kheer to serving bowls.
  • You can additionally garnish with sliced almonds/pistachios/rose petals- this is optional
  • Serve delicious mouth watering kheer warm or cold as desired

  1. Hi Rekha – How interesting that phool makhana (lotus seeds?) are edible and something you can cook with. I live in Texas and I wonder if there is anywhere I can buy any. Maybe I could order them online… Are they expensive generally?
