I do love pickles and I have various kinds of dishes using Achari Masala. Now making pulao(Pulav/pilaf) is something I prefer to make for lunch as it takes lesser time to prepare and you can serve them with raita/papad or eat them as-is.

The other day I came across Tarla Dalal’s Kabuli Chana (Chickpeas) Achari Pulao and I really wanted to try it. I have made few modifications to the original recipe. You can still add Chickpeas to this pulao and make it even more healthier. Now I have used Achari Masala instead of directly using Achari whole spices as my son dislikes biting into whole spices. The beauty of this dish is you can add any veggies of your choice

This dish is so easy to prepare and really pampers your taste buds. I just loved the taste, this dish is for pickle lovers like myself. You would relish each and every spoonful of this dish as it is right flavored with spices. This is also perfect dish to serve when you have guests at home

*If you wish to cook this in pressure cooker, add 1.5 cups water and pressure cook for 2 whistles. In case it is not completely cooked then add additional 1/4 cup water and cook

**Veg Broth renders richer taste to pulao , now since pickle and broth both contains salt, adjust salt accordingly. You can use oil or butter in place of ghee, ghee adds in rich flavor to the dish

Servings: 3


  • 1 cup Basmati Rice/Long grain rice
  • 2 tbsp Mango Pickle
  • 3/4 cup chopped veggies (carrots, beans,potatoes, peas, cauliflower florets etc)
  • 1 tbsp Achari Masala (homemade/store-brought)
  • 1/4 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • 1 medium onion thinly sliced
  • 2-3 tbsp ghee (Clarified butter)
  • 1 teaspoon ginger garlic paste
  • Salt to taste
  • 2 cups water/Veg Broth
  • 1-2 tbsp chopped coriander leaves

Steps to prepare

  • Clean and soak Basmati rice for 30 minutes. Drain excess water and keep it aside

  • Grind pickle to coarse paste and keep it aside
  • Heat ghee in deep bottom vessel
  • Add onions to the pan and saute until medium brown
  • Now add ginger garlic paste and saute until raw aroma disappears
  • Add in veggies and saute for 2-3 minutes
  • Add in the spice powders
  • Now add in pickle paste and mix well
  • Add in drained rice to the pan
  • Saute rice for 1 minute
  • Now add water and salt mix well.
  • Bring to boil. simmer, cover and cook until rice is done.
  • Gently fluff rice with fork
  • Garnish with Coriander leaves. Serve rice warm with raita/curry or papad
