The other day when I was preparing chili fish, I had used egg white and had leftover egg yolk and some lemon curd in my refrigerator with 2-3 limes so I decided it was time for me to bake small moist, fluffy lime cake

I usually prepare mug cakes as they are simple, easy and can satisfy small dessert cravings however this time I decided to bake a small cake , just for me and hubby. It really was too delicious for words, this is one of the perfect cake for lemon lovers

Ingredients
- 3 teaspoons lemon juice
- 6 tbsp flour
- 1 egg yolk
- 3 tbsp whisked curd
- zest of 1/2 -1 lemon – adjust
- 1/8 teaspoon salt
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 5 teaspoon neutral flavored oil
- 4 tbsp – 6 tbsp sugar
For Lemon sugar glaze
- 1/2 cup icing sugar
- 1-2 teaspoon lemon juice
Steps to prepare
- Add egg yolk and sugar in a bowl. The lemon juice I used was quite tart so I added 6 tbsp sugar and reduced lemon zest quantity. For regular lemons, 4 tbsp sugar is enough

- Whisk ingredients well for 4-5 minutes

- Add lemon juice, curd, zest , oil and whisk well until well combined

- Sieve and add all dry ingredients to the bowl

- Whisk until well combined

- Pour the batter into prepared cake tin. I use silicon strips, they help me prepare pan of dimensions I need. I have made into 4 inch tin

- Bake for 18-20 minutes in preheated oven at 170 deg cel until toothpick inserted into centre comes out clean. Allow the cake to cool for 20 minutes and then demould and cool completely

- I have used lemon curd frosting on top. You can do lemon sugar glaze on top. Mix sugar and lemon juice to form thick -thin glaze as desired. Slice and serve this moist fluffy, tart, sweet lemon cake
