The last time I baked carrot cake, I was thinking about the mini version of it. You can check my carrot cake recipe under “Cakes and Cheesecake” section. Baking a cake requires time, effort and is meant for more than 2-3 people. For a single serving, mug cakes are the best. These are instant dishes which requires lesser time to prepare with no elaborate ingredients. They also help to satisfy instant dessert cravings
Now Mug cake and Baked cakes will have different texture but the taste is awesome. Oh, this mug cake was absolutely delicious and I have made this more than once.

Preparation time: 4 mins Cooking time: 1 min 30 sec Total time: 5 min 30 sec

Ingredients
- 1 Egg
- 4 tbsp grated Carrot
- 4 tbsp Sugar
- 1/8 teaspoon Cinnamon
- 1/4 teaspoon vanilla extract
- 2 tbsp melted Butter
- 6 tbsp Flour
- 1/2 teaspoon baking powder
Steps to prepare
- Whisk egg in a microwave safe mug. Use a bigger mug so that cake does not inflate too much

- Add butter and sugar, whisk well

- Add grated carrots, cinnamon, vanilla extract and mix well

- Add flour and baking powder. Whisk well.
- Optionally you can add nuts

- Mug cake is ready to go in Microwave. Microwave for 1 min 30 sec to 1 min 45 sec until done, the timing will depend on Microwave capacity. Keep an eye on the cake after 1 min 30 sec

- Allow to cool for 5-10 minutes
- Top with whipped cream and serve warm
