When you are in a hurry and want to eat something healthy in morning then this easy, fluffy and healthy oats pancakes is the best.
***In case you are a vegetarian, you can substitute egg with flax egg or 1/2 of large ripe banana mashed. You can substitute sugar with honey in the batter while preparing the pancakes. I have used whole wheat flour here, in case you want to go gluten free then use buckwheat flour as replacement
Top up the pancakes with honey/chocolate or maple syrup and nuts before serving and they taste absolutely delicious

Ingredients
- 1/2 cup instant oats
- 1 egg/ flax egg/ 1/2 ripe banana mashed
- 1 tbsp sugar
- 1/2 teaspoon cinnamon
- 3/4 cup low fat warm milk
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 2 tbsp oil
- 1 teaspoon vanilla extract
- 1/2 cup whole wheat flour
- 1/2 teaspoon vinegar
Steps to prepare
- Add milk and vinegar in a bowl and rest on counter for 10 minutes

- Blend flour, baking soda, sugar, cinnamon, salt, baking powder and oats to powder

- Add oil , vanilla extract and egg to mixture

- Add prepared milk mixture and blend well until lump free

- Transfer the prepared batter to bowl and start making pancakes. In case you want to prepare them next day, then store in airtight container and refrigerate overnight

- Heat non stick pan
- Pour 1/4 Cup of batter into the pan
- Drizzle oil on sides. Let it cook until edges turn golden brown and start bubbling

- Flip over and cook other side of the pancake. Do this until batter is completed. If there is any left over batter, then discard

- Transfer pancakes to serving plate, top with sliced fruits and nuts of your choice
- Drizzle honey or syrup on top. Serve immediately, if you have excess pancakes, then immediately store in air tight container and refrigerate, warm up before serving and it should be consumed within 8-9 hours
