When strawberries are in season, it’s time to bake the cake. Fluffy cake with cream cheese strawberry frosting and topped with fresh strawberries is definitely must try cake. Moist , melt in mouth, these cake taste heavenly delicious. If you love berries , then you really must have had this cake in the past so now make this cake from scratch.

I had baked this cake as part of Sprig Gourmet – Bake cake competition and this really was outstanding in taste. Ditch the cake mix box, make this amazingly delightful cake and you can really impress all. Do share your experience once you bake this cake

Preparation time: 25 mins Baking time: 30 mins Total time 55 mins

Servings : 8


  • 396 g All Purpose Flour
  • 6 large Egg Whites
  • 1/2 Cup + 2 tbsp Strawberry Puree
  • 2 teaspoon Sprig Vanilla Essence
  • 220 g unsalted soft Butter
  • 11/2 teaspoon Baking Powder
  • 2 teaspoon Vinegar
  • 1 teaspoon Baking Soda
  • 1 ml Strawberry Essence (Optional) – adjust quantity
  • 1-2 drops pink food coloring
  • 175 ml whole milk
  • 1/2 Teaspoon Salt
  • 280 g Granulated Sugar

For Frosting

  • 10 g Frozen Dried Strawberries
  • 110 g Unsalted Butter At Room Temperature
  • 3 cup Icing Sugar
  • 1-2 tbsp Milk
  • 1/4 teaspoon Salt
  • 250 g Cream Cheese Room Temperature
  • 2 teaspoon Sprig Vanilla Extract

Steps to prepare

  • All the ingredients mentioned in this recipe should be at room temperature
  • Preheat oven to 180 deg cel and line two cake pans
  • Sieve flour, baking powder, baking soda, salt in a bowl and keep it aside
  • In a separate bowl, mix vanilla essence, food coloring, strawberry puree, milk and keep it aside. Add strawberry essence only if you have it else skip it
  • Blend 220 g butter in a bowl for 1 minute
  • Add granulated sugar and blend for 3 minutes
  • Add egg whites 1 at a time and beat for 30 sec before adding next one.Now blend well for 3 minutes
  • Now add prepared strawberry mixture and blend well
  • Add vinegar and mix well
  • Slowly and gradually add dry ingredients and mix until lump free. Do not over mix
  • Pour batter into prepared pans. Tap gently and level evenly
  • Bake for 30-35 minutes until done. To check doneness, insert toothpick in centre, few crumbs are ok, there should not be any batter
  • Cool cakes for 30 minutes in pan. Demould and cool on wire rack completely
  • Cling wrap cakes and freeze for 20 minutes and using serrated knife, slice top layer of cake to level evenly and keep it aside
  • Lets prepare frosting now
  • Ground frozen strawberries to fine powder. Blend cream cheese, butter in a bowl for 2 minutes
  • Add icing sugar slowly and blend well. Add ground strawberry powder and blend well
  • Add milk, salt and vanilla extract.
  • Blend well. If required, add pink colouring and mix well
  • Place first cake on cake board . Add cream cheese frosting on top and spread evenly. Place second cake and spread frosting on cake on top and sides evenly
  • Chill cake for 20 minutes
  • Place fresh strawberries on top. Slice cake and serve
