This is a delicious sweet , mildly spiced and tangy Pickle from Malabar, Kerala . It tastes well with Biryani/ Malabar parottas. One of the perfect pickle to be served for dinner parties/get-togethers. Sweetness of the dates, hotness of the chilies and sourness of vinegar renders the perfect taste to the pickle.

Ingredients
- 250 g Soft Dates
- 3 tbsp Vinegar
- Salt to taste or 1/2 teaspoon Sugar
- 1 tbsp Sugar
- 1 sprig Curry Leaves
- 3 tbsp Oil
- 1 tbsp Red Chilli powder
- 1/4 teaspoon Hing/ Asafoetida
- 4 Green Chillies finely chopped
- 1/4 teaspoon Turmeric powder
- 1 teaspoon Mustard Seeds
- 1 tbsp Ginger paste
- 1 tbsp Garlic paste
Steps to prepare
- Deseed and roughly chop dates. In case you are using dried dates, you will need to soak them in warm water for 1-2 hours and soften it
- Heat oil in a pan. Add mustard seeds and allow it to splutter
- Add curry leaves and hing. Mix well
- Add ginger paste, garlic paste and green chilies. Saute until raw aroma disappears
- Add all the spice powders and saute for 2 minutes
- Add dates and cook until it softens
- Add salt and sugar. Mix well. Dates should be well coated with all spices and salt. Saute for 2 minutes
- Add vinegar and mix well. Saute until pickle/ mixture comes together. Switch off the heat
- Allow to cool completely.
- Serve with papad and Biryani or Parottas
- Store in cool dry place in sterile airtight container for any leftover pickle
