This is tangy and delightful twist to traditional Besan Barfi. Besan barfi (fudge) is rich , decadent and a very common sweet prepared during festivals like Diwali and Dussera. So this winter, I decided to give a delicious twist to this traditional sweet
Since this contains Khoya (Milk solids), you need to consume it within 3 days. Easy to make , this is one sweet which is very popular in Indian households. Besan/Gram flour is gluten free and used more or less in most of the Indian sweets

Ingredients
- 1 cup Besan/Chickpea flour/Gram flour
- 1 cup orange juice
- 1-2 tbsp orange zest – optional
- 1/4 cup chopped nuts
- 10-12 tbsp Ghee (Clarified butter)
- 3/4 cup Sugar- adjust
- 1/2 cup grated khoya
- Orange food colouring – optional
- 3 tbsp chopped nuts to garnish
- 1 teaspoon dried Rose petals to garnish
Steps to prepare
- Heat ghee in a pan

- Add Besan and mix well. Saute until aromatic

- Add orange juice and mix well

- Add orange zest, note this is optional step, this will render slight bitter taste to barfi

- Add sugar and mix well. Depending on sweetness of orange juice, adjust the sweetness

- Add grated khoya and mix well. Cook until mixture leaves sides of pan

- Add nuts and food coloring. Mix well.
- Transfer mixture to prepared greased dish and level evenly

- Garnish with nuts, rose petals and refrigerate for 2-3 hours
- Slice and serve
