Gluten free, healthy and time saver, consume these Pancakes guilt free. Buckwheat helps in maintaining cholesterol levels and is quite nutritious. If you are health conscious and looking for a healthy breakfast choice then this dish is for you.

I forgot to click pictures of few steps,nevertheless I hope my instructions are clear enough to try it out. Unlike regular pancakes batter, this should not be of pouring consistency, it should be more like cake batter else the pancakes won’t turn out right

I know Buckwheat doesn’t taste as good as APF and yet this indeed is a tasty pancake. The best part is you pour them on baking tray and while its baking you are free to do rest of the work. In the mornings, multi-tasking is a skill which is definitely required so if you are in hurry then do try out these pancakes next time and let me know how it turned out 🙂

Preparation time: 10 mins Cooking time: 12 mins Total time: 22 mins

Servings: 2


  • 1/2 cup Buckwheat flour
  • 2 large ripe bananas
  • 1/2 teaspoon baking soda
  • 2 tbsp extra virgin olive oil or oil of your choice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon Apple cider vinegar

Steps to prepare

  • Preheat oven to 180 deg Cel and line baking tray with parchment paper
  • Mash ripe bananas with fork and keep it aside
  • In a bowl, add all dry ingredients and mix well.
  • To this, add vanilla extract,oil, vinegar and mashed banana
  • Mix well until lump free. It should be thick batter. The batter should not be pouring consistency
  • Pour 1/4 cup scant quantity and lightly flatten it with ladle. Leave gap between pancakes as it will expand while baking
  • Bake for 12-15 minutes until golden brown and firm. You will get 6 mini pancakes
  • Allow to cool lightly. Drizzle honey/maple syrup on top. Serve warm. Add chopped bananas or berries on top for additional taste
