Macaroni salad is one of the most easiest to make, delicious in taste and popularly loved salad. It’s easier way to make kids eat veggies too
You can make this salad overnight, refrigerate and serve next day. You can play around with add – ons for this salad. Add or change veggies , make it more colorful. Add cheese as extra topping so go ahead and make this one and let me know how did you prepare it 🙂

Ingredients
- 1 hard boiled egg
- 1 cup macaroni
- 1/2 cup mayonnaise
- 1/2 cup greek yogurt
- 1 teaspoon parsley
- 3 tbsp diced onion
- 1/2 cup carrots chopped like matchstick
- 1/2 cup diced bell pepper
- 1/2 teaspoon salt or to taste
- 1/2 teaspoon pepper or to taste
- 1 teaspoon honey
- 1/3 cup diced celery
- 1 tbsp white wine vinegar
- 1 teaspoon mustard sauce
Steps to prepare
- Cook macaroni in 3 cups water with salt and 1 tbsp olive oil
- Immediately drain excess water and rinse through cold water to prevent further cooking. Macaroni should not be soggy
- In a bowl, add yogurt, mayonnaise, honey, salt pepper, mustard sauce and vinegar. Mix well until well combined
- In another bowl, chop and add eggs, to this add all chopped veggies and macaroni
- Now add prepared mayo dressing over the veggies and macaroni. Toss well to evenly coat.
- You can optionally add grated parmesan cheese on top before serving
- Garnish with parsley. Serve immediately or later. This can be refrigerated up to 1 day
