Khameeri Roti is one of the popular flat bread from Mughlai cuisine. Its really soft and delicious. One of the perfect roti to be served be any occasion or parties. This roti is made from yeast, its quite fluffy and mouth watering in taste. Its quite simple and easy to make. Do try out and let me know how it turned out 🙂

Preparation time: 150 mins Cooking time:10 mins Total time: 160 mins

Servings: 3


  • 1 cup Maida/ All purpose flour
  • 1/2 teaspoon sugar
  • Salt to taste
  • 2 tbsp milk
  • 1 teaspoon active instant yeast
  • 1-2 teaspoon oil
  • Warm Water as required
  • 1 tbsp Melon seeds
  • 1 teaspoon Kalonji/Nigella seeds
  • 1 teaspoon sesame seeds
  • 3-4 tbsp chopped coriander leaves/Cilantro
  • Butter for serving

Steps to prepare

  • In a bowl , add flour
  • Make 3 wells, add sugar, salt and yeast respectively. Never add salt on yeast or vice versa
  • Gently mix everything well
  • Add milk and water to flour mix
  • Knead the mixture into soft dough
  • Add oil and knead into soft smooth dough. Dough should not be sticky
  • Cover and rest the dough in warm place for 2 hours
  • Dough has doubled in size
  • Gently deflate the dough and knead again for 2-3 minutes
  • Divide the dough into equal portions
  • Dust the surface with flour and roll into small circle/poori. Sprinkle sesame, melon and Nigella seeds. Now sprinkle chopped coriander leaves on top

  • Now roll into circle/roti
  • I have explained process of cooking roti over stove top. This can be cooked in tandoor or alternatively baked in oven. For oven , preheat to 180 deg Cel, place rotis on greased parchment paper on baking tray. Generously brush tops with butter all over and bake for 20-25 minutes until done
  • For stove top: Brush tops with water all over
  • Now place the roti upside down on hot tawa and ensure roti sticks to hot tawa. Non stick tawas will not be good for this purpose as roti might slide off when tawa is held upside down over heat
  • Flip tawa and cook roti over direct heat until evenly browned over all sides
  • Now cook the bottom of the roti , using spatula scrape the roti from tawa
  • This is how bottom portion of roti would look like
  • Generously brush tops with butter and serve hot with any curry/gravy
