Yummy Creamy delicious rich Sago/Sabudana Kheer is sweet Indian pudding made from Tapoica pearls and milk. It’s also made during vrat (fasting) season.

Ingredients
- 1/4 cup big Sago
- 3 cups full fat milk
- 10-12 cashews
- 1 teaspoon raisins optional
- 1 teaspoon Ghee /Clarified butter
- 1/4 cup sugar adjust to taste
- 1/4 teaspoon cardamom powder
- 1/2 cup warm water
Steps to Cook
- Clean and rinse Sago 2-3 times. Soak sago in warm water for 1 hour
- Boil milk in a vessel, now simmer and cook for 4-5 minutes over low medium heat
- Add sago to milk and mix well. Cook over low medium heat
- Add sugar and Cardamom. Mix well. Cook until milk starts thickening. Sago should be completely cooked. Switch off the heat
- Heat ghee in small pan, add raisins and saute until they bloat, remove and add cashews and saute until golden brown
- Add cashews and raisins to kheer and mix well . Kheer will thicken on cooling so do adjust the quantity of milk before preparation
- Serve kheer warm or cold- as desired
