One of the popular European breakfast includes omlette which can be served with various toppings along with toast. This is healthy, nutritious and easy to make. I had this omelet several times when I visited abroad and so decided to give this a try making at home and now this is one of my favorite easy quick breakfast dish

Ingredients
- 2 eggs
- 4-5 tbsp chopped mushrooms
- 4 tbsp grated cheese
- 1 teaspoon Oregano
- 1 tbsp onion finely chopped
- 1-2 tbsp olive oil
- 2 tbsp milk
- 3 tbsp chopped parsley
- Salt and pepper to taste
Steps to Cook
- Saute 4-5 mushrooms, 1 tbsp onion in 1.5 tbsp hot oil till mushrooms brown. Switch off the heat
- Add 4 tbsp grated cheese to fried mushroom
- Whisk 2 eggs, salt, pepper, 1 tsp oregano, 2 tbsp milk in a bowl
- Add parsley and whisk well
- Pour whisked eggs into a hot greased non stick pan
- Add mushroom-cheese mix towards one end, you can sprinkle additional cheese on top of required. cook till done, fold and remove
