Aha, summer is back and here comes my another Mango recipe. As mentioned in my earlier posts, I never seem to get my fill of this luscious fruit. I always have stock of various types of mangoes at home and decided to make Mango ice-cream. Its so easy to make and delightful in taste.
This is also one of the most popular ice-cream. There are quite many variations available to this dessert. I always recommend using seasonal fruits as they are best in taste during that period. Its key to select ripe tasty mangoes to reduce the amount of artificial sweeteners. You can use home made or store brought mango pulp for this recipe. If required, you can add or skip yellow food color to make this ice-cream appear bright
So lets beat this summer heat with this delicious rich creamy Mango Ice-cream
Preparation time: 7 hours; Servings :4
Ingredients
- 200 ml heavy cream – cold
- 5-6 tbsp cold condensed milk
- 2 Alphonso mangoes pureed – cold
- 2 tbsp chopped mangoes optional
Steps to Cook:
- Blend cold cream until stiff peaks form

- Add condensed milk and blend well. The quantity of condensed milk depends on the sweetness of mangoes. In case you do not have condensed milk, you can always substitute it with icing sugar

- Add Mango puree and blend well

- You can fold in chopped mangoes to ice-cream if desired. This is optional
- Add the mango ice-cream to cold air tight container. Cover and chill for 7 hours or overnight

Take the ice-cream out and allow it thaw for few minutes. Scoop it out to serving bowls. Serve this delicious ice-cream cold
